Utah State University Celebrates Food Day

Utah State University Dietetics Program and USU Dining Services celebrate USU’s 4th Annual Food Day with events Wednesday, Oct. 22, through Friday, Oct. 24.

On Wednesday, Sharon Palmer, a registered dietitian and author of two books, will present, “Plant-Powered Eating for Optimal Health,” discussing trends in eating more whole plant foods, including its benefits, delicious qualities and strategies in the Taggart Student Center (TSC) Auditorium at 11:30 a.m. Palmer will do a book-signing following her talk. A video of her presentation will be available online the following day via the Food Day link on the College of Agriculture and Applied Sciences’ website (caas.usu.edu).

On Thursday, USU Dietetics and USU Dining Services will host a free event in the TSC Hub from 10 a.m.-2 p.m. Attendees will be able to sample recipes and learn more about plant-based eating from information booths and activities developed by students. Palmer’s recipes will be featured throughout the week in university dining.

USU Dietetics students will share the benefits of eating more plant-based meals with their fellow students, faculty and staff as part of a practicum course taught by Tamara Steinitz, clinical associate professor in the Department of Nutrition, Dietetics and Food Sciences.

“Food Day is a fabulous opportunity for our students to spread the good word about incorporating more grains, legumes, produce and nuts that are healthy and taste great,” Steinitz said. “Sharon’s guidance to “love the foods that love you back” is a main theme this year.”

A finale for Food Day is set for Friday, Oct. 24, with a screening of the film “Growing Cities” from noon-1 p.m. in the TSC Auditorium. The documentary examines the role of urban farming in America and the power it has to revitalize our cities and change the way we eat and is sponsored by the Department of Plants, Soils and Climate.

Across the nation, Food Day will be commemorated with thousands of events in all 50 states aimed at promoting healthy food choices, sustainable food production and access to healthy food for all people. It is an opportunity to celebrate real food and the growing movement to improve food policies. More information can be found at the Food Day website.
