Low Fat, Low Taste?
Biologists have long talked of taste buds for salty, sweet, sour and bitter, but Utah State University researcher Tim Gilbertson says our tongues also have a taste receptor for fat. That's why we crave foods with fat, which our bodies need but many of us eat in excess. Gilbertson is exploring fat substitutes that will please both our palates and our waistlines.
